Sometimes, I just don’t feel like cooking when I get home from work. To make sure that I always eat a nutritious meal on those days, I head for my freezer.
Today, I made lovely dish with an entire bag of frozen spinach, with a portion of pumpkin soup, and a few grape tomatoes from my garden. I cooked a large batch of pumpkin soup about three weeks ago, and froze four individual containers. Not my prettiest meal, and maybe it was not a gourmet meal, but it was very, very tasty, and very delicious!
